Let’s play make believe for a minute – imagine you’ve decided that you’re moving. Not just to a new neighborhood or to the other side of the state; you’re moving across the world. Very little of your current life will be able to make the journey with you. You’ve decided to start a new life.

The planning is done, the paperwork is filed; all that’s left to do is wait. During the waiting, your only major responsibility is preparing for your new home. You’re probably learning the local language, studying their customs, and trying to understand what it means to be a citizen of your new home. You’re spending your days doing things that line up with your goal of establishing your new life.

The make believe is over; but the reality is that you are still moving. We all are. And for those who have accepted Jesus, our new home is incredible (see Revelation 21 for all the amazing details). But just like in our make believer story, we are called to live like people who are preparing to relocate.

Everyday, our actions reflect our belief and faith in God’s promises. If you really were planning to move across the world, you probably wouldn’t go out and buy a brand new furniture set. If you did, those around you might question how much faith you have in your plan. The same thing goes for our big move to Heaven. Although buying a new furniture set won’t derail your relocation, it isn’t necessary, helpful, or purposeful for your new life.

No matter what we do while we’re waiting for our move to take place, we won’t be uninvited. Our acceptance and belief in Jesus and His death on the Cross is our pre-approved ticket for entry. But we can make our lives more difficult and less productive during the wait. God asks us to live like citizens of Heaven now, so that we might showcase our faith in Him. We’re the “Eternity Influencers.” We’re glorifying God by our actions of faith and preparations for the fulfillment of His promises.

Ingredients

  • 1 medium apple
  • 1/4 cup spelt flour
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon unsweetened apple sauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon pure maple syrup
  • dash of salt
  • non-stick spray

Instructions

  1. Remove core from apple and slice into rings, set aside
  2. In a bowl, combine egg, almond milk, apple sauce, vanilla, and syrup and mix
  3. In a separate bowl, mix flour, baking powder, salt, and apple pie spice together
  4. Combine the wet and dry ingredients until just mixed
  5. Pre-heat a griddle or skillet and spray with non-stick spray
  6. Using a fork, dip each apple ring into the pancake batter, making sure it's completely covered
  7. Keeping as much of the batter stuck to the apple as possible, transfer the rings to the griddle and cook for 3-4 minutes on each side

Tips & Tools

Cutting your apple rings to about the width of your pinkie finger will ensure that they’re thick enough to “hold” the batter, but thin enough to soften while cooking.
