I was planning to make stuffed peppers for dinner the other night, but I temporarily forgot what I was doing, and realized I was slicing the peppers, instead of preparing them to be stuffed – so I had to improvise, which actually turned into a fun, new take of the traditional stuffed pepper recipe.
You can use any color bell peppers you’d like, I went with green. Cook lean ground turkey stove top, and season with choice seasoning (I used Flavorgod everything seasoning). In a bowl, combine the cooked turkey, 2 sliced bell peppers, 1 sliced onion, and 1/2 can of corn. Mix well. Spread a thin layer of marinara sauce or fresh salsa along the bottom of a baking dish. Pour the pepper mix into the dish, and top with 1/2 cup of shredded mexican cheese (if you went with salsa) or shredded mozzarella cheese (if you went with marinara). Bake on 350 for 15 minutes.
