Tropical Oats


I never used to eat oats, to be honest, I thought they were kind of blah. When I recently did a 3 week detox and cleanse (read about it here!) I started eating them, and now, I just can’t stop!

I didn’t realize how much fun the recipes could be – I’m all about customizing anything. When the whole Chipotle, or “build your own” concept came out, it was because of people like me – if you tell me I can add different things to the same foundation to make it unique… SOLD!

Since we just got home from Fiji, I’m still feeling the tropical vibe – we had fresh fruit every day, sometimes straight from the market, and it was amazing. I will say that the Costco pineapple I had today wasn’t quite as good, but it’s understandable since there are no Pineapple plants here in Ohio. BTW, did you know pineapples grow from a plant and NOT a tree? I knowwwww, mind blown. #lessonslearnedinfiji

Tropical Oats

Prep Time: 3 minutes

Cook Time: 6 minutes

Total Time: 9 minutes

Makes: 1 serving

Serving Size: 1 bowl

Tropical Oats

Ingredients

  • 1/2 cup steel cut oats
  • 1/2 cup diced pineapple
  • 1/2 tsp raw honey
  • 1 T unsweetened coconut flakes
  • 1 T chopped pecans or walnuts
  • 1/2 tsp ground cinnamon
  • pinch of sea salt
  • 1 cup water

Directions

  1. Bring salt and water to a boil in saucepan
  2. Add oats, stir, and cook for 5-6 minutes until all water is evaporated
  3. Move oats to bowl and stir in remaining toppings
  4. Serve with a side of greek yogurt for additional protein

Notes

21 Day Fix Containers = 1 yellow, 1 orange, 1/2 purple (add in red container if greek yogurt is added to meal)
