As we gather around our tables today to enjoy an abundance of food, to plan our midnight shopping adventures, and to celebrate the family and friends in our lives, let’s not forget about all the things “unseen” that we also have to be thankful for.

For most of us, it’s easy to be grateful for material things, tangible things – the things we can touch and hold, the things we can photograph. But it isn’t always so easy to remember the countless blessings in our lives that are invisible to the naked eye.

Our salvation, the good God who walks through our days with us, and the hope we get to carry in our hearts. So today, as we focus on our blessings, don’t forget to spend a moment directing your attention toward those unseen things as well.

Turkey Day Egg Rolls

Serves 4 Egg Rolls

Ingredients

    Egg Rolls
  • 4 eggs
  • 4 turkey sausage links
  • 4 egg roll wraps
  • 4 teaspoons goat cheese
  • Salt and pepper to taste
  • Non-stick cooking spray (for air fryer) or 1/2 tablespoon coconut oil (for skillet)
  • Cranberry Dipping Sauce
  • 12 ounce bag fresh cranberries
  • 1 large Honey Crisp apple
  • 6 tablespoons coconut sugar
  • 3 sage leaves
  • 1/2 cup water

Instructions

    Egg Rolls
  1. Cook turkey sausage stovetop in a skillet with a small amount of water over medium heat until browned and cooked through, or according to instructions on package
  2. Crack eggs and scramble in a bowl with salt and pepper
  3. Cook eggs in a skillet over medium heat
  4. When eggs are cooked, divide them up into four equal parts
  5. Pre-heat air-fryer to 320 degrees and spray with non-stick spray
  6. Lay an egg roll wrap on a flat surface
  7. Place 1 egg in the middle of the wrapper diagonally
  8. Spread 1 teaspoon of goat cheese across the eggs and place the sausage link on the top
  9. Fold one corner of the wrapper across the food and tuck it underneath the food
  10. Fold in both corners of the wrapper
  11. Roll the egg roll until the wrapper is closed and with a small amount of water on your fingertips, press the egg roll shut (the water should make the wrapper stick to itself)
  12. Repeat for each egg roll
  13. Drop the egg rolls into air fryer and cook for 4 minutes
  14. Cranberry Dipping Sauce
  15. Peel apple and chop into small pieces
  16. Combine all ingredients in a sauce pan and stir
  17. Bring to a boil and then lower heat to medium-low and allow to simmer for 15 minutes, stirring occasionally
