Taco Cups


We always love tacos in our house – but we have recently steered away from them because I haven’t been able to find taco shells that I like. I love Ezekiel wraps, but every time I make them, they turn into a burrito and not a taco, and there is a clear difference between the two 😉

I had some leftover butter lettuce and decided to try them out as “taco shells” and they were perfect! They are the perfect size and shape to fill up, fold up, and taco up.

In a pan, combine 1 pound of lean ground turkey, 1 teaspoon of chili powder, 1 teaspoon of garlic powder, 1 teaspoon of black pepper, and 1 teaspoon of cumin. Cook until done and drain excess liquid. Fill up the lettuce cups with cooked meat, black beans, a tiny bit of shredded cheese, fresh salsa, and greek yogurt in place of sour cream. Can also add other veggies or avocado!

Serve warm! Such an easy, weeknight dinner – and the perfect clean eating, budget meal!
