Sweet Tater Tots

Give me all the summer time vibes! That used to mean sippin fruity cocktails by a pool somewhere… now, it means tater tots. Insert laughing-crying emoji here.


Seriously though, I can’t be the only one whose experiences are shaped by the food they are (or aren’t) eating, right?! HA. It’s okay if you’re laughing at me. I’m laughing at me. Either way, I’m in tater tot heaven right now.


We use our grill almost daily in the summer, and nothing goes better with burgers than all the fried side-dishes, so I started working on my obligatory-air-fryer-created side last night, and tots are what came to mind.


These are really easy to make, and one of my favorite things about the air-fryer is that you can kind of set it and forget it. Not really, please don’t do that, you’ll burn your tots… but you can move around prepping other things pretty easily while they’re cooking.


These littles babies are also 21 Day Fix approved, if you follow that plan. If you don’t, you need to check it out – 2 years later and it’s still the only nutrition plan that I live by! This recipe serves 2 people, and each serving size is 1 Yellow container.


As always, these would be even better with a guilt-free condiment, and I’ve come up with nothing. Condiment creation is obviously not my strong suit, If you have any healthy dippin sauce ideas, I’d love to hear ’em!


Sweet Tater Tots

  • 1 large sweet potato
  • 1 egg white
  • 1 tsp sea salt
  • 1 tsp parsley
  • non-stick cooking spray


  1. Skin sweet potato and microwave or bake until it's cooked and soft
  2. Cut into small pieces and put into a food processor
  3. Process until smooth with no clumps
  4. Pre-heat air fryer on 400 degrees and spray with non-stick spray
  5. Add egg white and seasonings to sweet potato and mix well
  6. Form tots in your hand and drop individually into air fryer
  7. Cook for 15 minutes or until browned and crisp, moving tots around frequently to make sure they aren't sticking
