There is an amazing place in Chicago called Bull Bear, and they have what are probably the world’s best nachos. 3 years ago, I had them for the first time and I haven’t stopped thinking about them since. The thought of them brings on strange nacho cravings. Seriously, if you are in the Chicago area – go there. get them. They are worth your entire year’s worth of cheat meals. But… if what I’m saying is making you hungry for nachos and you can’t fly cross country – try these! They will save you thousands of dollars on air fare, and thousands of calories as well 🙂
Peel 2 sweet potatoes, and cut them into chips – make these thin! Maybe 1/8 of an inch, as thin as you can comfortably cut them without adding some of your finger to the meal. Toss them in 1 tablespoon of olive oil to make sure they are coated. Cover a cookie sheet with parchment paper, and line the sweet potato chips up without touching each other. Bake on 450 degrees for 10 minutes, and flip them over for another 10 minutes. Watch them carefully for burning, and take them out sooner if they are. While sweet potatoes are cooking, cook 1/2 pound of lean ground turkey. Drain grease, add 1/4 cup of water, 1/2 tablespoon of equal parts chili powder and oregano, 1 teaspoon of garlic powder, and 1/2 teaspoon of red pepper flakes. Let simmer until chips are cooked. Warm black beans in microwave or stovetop.
On a plate, put sweet potato chips as the bottom layer, cover with a spoonful of ground turkey and a spoonful of black beans (drained). Top with shredded cheese to taste (I used vegan cheese here, but any will work!) and microwave for 60 seconds to melt cheese. Top with your favorites. I did fresh banana peppers, yellow onion, fresh salsa, and greek yogurt!
You can leave the ground turkey out to make this vegetarian or vegan, and it’s gluten free!
