Superfood Smoothie Bowl Recipe 1


I have a new love in my life – smoothie bowls. I know, I know – I’m behind by like… years on this idea. I’ll admit that I saw this trend on Pinterest last year and had no interest. I drink Shakeology every morning, which gives me tons of superfoods to get through the day strong, so I totally disregarded these bowls, and now I’m kicking myself for waiting so long to jump on the bandwagon.

I’ve really been trying to try new fruits lately – some of them are so pretty and some are crazy looking, but one of my new favorites is Acai. I’ll admit that I tried the chocolate covered acai berries a few years ago (of course I did) and they were amazingggggg, but I’m not sure that’s really considered fruit at that point. Is there anything that wouldn’t taste good covered in chocolate?

These frozen acai smoothie packs are so easy to work with. They can be found on amazon, and also in some health food freezer sections. The ladies in my fitness accountability group were so excited to learn more about these bowls, so I created a little instructional video, so you can see the process in action.

These are so versatile too – they can be topped with any fruits, nuts, granola, even made into dessert bowls. I haven’t really done a lot of experimenting, because I know I love what I’ve tried, and don’t want to ruin a good thing, but my curiosity is getting the best of me, which means it won’t be long until I dive into a peanut butter-chocolate chip smoothie bowl, stay tuned for more info on THAT.

Superfood Smoothie Bowl

Cook Time: 5 minutes

Total Time: 5 minutes

Makes: 1 serving

Serving Size: 1 bowl

Superfood Smoothie Bowl

Ingredients

  • 1 acai smoothie pack
  • 1-2 tablespoons unsweetened almond milk
  • 1/3-1/2 frozen banana
  • optional toppings:
  • granola
  • kiwi
  • nuts
  • greek yogurt

Directions

  1. Run acai packet under warm water for 5-10 seconds until it loosens
  2. Empty packet into blender or food processor
  3. Add banana and 1 tablespoon of almond milk
  4. Blend until smooth
  5. Note: you may have to scrap down the sides of the blender with a spatula a few times to get all the fruit blended well. Add in additional almond milk as needed.
  6. Top with desired toppings and enjoy immediately!
