We have small troubles for a while now, but these troubles are helping us gain an eternal glory. That eternal glory is much greater than our troubles.


Even just the world trouble sends chills, doesn’t it? It’s so difficult to think about difficulties and challenges, probably because they’re always just around the corner, and we’ve become accustomed to them jumping out at us at any given moment. It’s easy to say, but difficult to accept: the troubles and trials that we face here on earth are so short and minute in comparison to what we get to look forward to in eternity. As Christians, we already know what the future holds for us (not specifics or details, but that life is promised to us forever) so the time spent here in trial is only a short time.

Even though the trials we face are harder than anything we’d like to experience, we’re also given the gift of shining a light on our struggles; and that light is God. By sharing our trials, showcasing that they’re incredibly difficult but made manageable through faith, we are leading others to a relationship with Him. We are working as disciples by living a life of faith, even in tough times – especially in tough times.

  • 1/2 cup spelt flour
  • 2 eggs
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons unsweetened apple sauce
  • 1 teaspoon baking powder
  • 1 tablespoon maple syrup
  • dash of salt
  • 1 teaspoon vanilla extract
  • Casserole
  • 4 eggs
  • 2 cups mixed berries of choice
  • 1 tablespoon syrup
  • 1 tablespoon powdered sugar


  1. Combine all waffle ingredients and mix just until combined
  2. Spray a waffle maker with non-stick cooking spray
  3. Cook waffles until indicated on waffle maker, about 2 minutes
  4. Preheat oven to 350 degrees
  5. Spray a baking dish with non-stick cooking spray
  6. Cut waffles into small pieces
  7. Add waffle pieces, fruit, syrup, and eggs to a bowl and mix around until completely coated
  8. Allow to sit for 10 minutes
  9. Pour waffle mixture into baking dish and bake for 20 minutes
  10. Sprinkle with powdered sugar before serving

If you want to save some time on this recipe, feel free to use frozen waffles or pancake batter instead of making the waffles from scratch!
