September 11th & Blueberry Coconut Muffins

I remember well all my troubles, and I am very sad. But then I think about this, and I have hope: We are still alive because the Lord’s faithful love never ends.


Today is a hard day. For the past 19 years, this day hasn’t been easy. It’s been filled with heartbreaking memories. It’s the day that new fears were brought to life and never died. It’s a day that reminds us of how short and uncertain life can be.

But this day can also be a reminder of God’s love, if we allow ourselves to see it. Amidst the tragedies, God’s love was displayed over and over again through the acts of kindness of so many humans. And while none of us truly understand what those in the center of the violent acts experienced, we know that their lives aren’t over.

God’s promises to use remain true, even in the midst of calamities. His promise of eternity because of Jesus’ death on the cross prevails. Those who lost their lives on September 11th in the horrible acts of terror were never out of God’s view, or His reach.

When we don’t know what to do or how to make sense of something, we can cling to one thing: God is still good. His love is unfailing, even when it’s hard. I encourage you to this let day be a reminder of that.

Blueberry Coconut Muffins

  • 1/2 cup coconut flour
  • 6 eggs
  • 1/4 cup coconut oil
  • 1/2 cup blueberries
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sweetener
  • 1/2 teaspoon vinegar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup water


  1. Preheat oven to 400 degrees
  2. In a bowl, combine all wet ingredients and mix
  3. In a separate bowl, combine all dry ingredients, excluding blueberries
  4. Combine wet and dry ingredients and add blueberries
  5. Mix gently just until combined
  6. Fill muffin liners or tin 3/4 of the way full and bake for 20 minutes or until a toothpick comes out clean from the center
