Let me start with this – I know this meal probably looks scary. When I saw this recipe listed in the dinner options from the 21 day detox I’ve been doing, I was simultaneously intrigued and terrified. What is this thing they call a fennel bulb?
But I decided to give it a go, because these last 3 weeks have been all about stepping out of my comfort zone and learning to appreciate food for what it is; fuel for my body. I had no idea where I was going to find a fennel bulb, but luckily, it found me when I was roaming the aisles of Trader Joes. There’s 2 bulbs in a container, in the veggie section of the store.
They smell like licorice, but don’t taste like it all, at least when cooked. I was really excited when I tasted it and it was very similar to an un-breaded bloomin onion. Overall, one of the easiest things I’ve made during this detox and really yum! We’ll definitely be incorporating this into our meal plans, and I bet it would be amazing with a little breading in the air-fryer too!
