We are officially in the heart of pumpkin erryyythang season. One of my favorite things about being a total foodie is that everything basically revolves around… well, food. You mention the word fall to me… mehh. But pumpkin season? YAS girl.
A few years ago, I lost my excitement for these food seasons because I started a clean eating journey, and I was determined to move from a self-conscious and unhealthy space to a healthy and happy lifestyle place. It took me awhile to figure out how to blend my old PSL-loving-self with my new fuel-with-ingredients-I-can-pronounce-self. I know how hard it can be to find food that you enjoy and that makes you feel good. In fact, I struggled with it so much that I made creating new recipes a top priority. And because I hate the idea of anyone else pushing pumpkin season to the side to reach their goals, I’m sharing all the goods – starting with this pumpkin spice french toast.
I normally pull out my super pretty kitchenware when I know I’m going to be posting pictures, but french toast making is all about convenience. I don’t care how pretty the bowl is, if you can’t dunk the bread into the batter evenly, it’s not worth it. Hence, this plastic tupperware container you’ll see featured. And by bread, I really mean english muffins. Ezekiel is my jammmmm. I think sprouted grain muffins are my favorite carb – don’t tell the others! – and I love the goodness that comes in them too. So many flavors – so much fun! I know that fun isn’t typically used to describe food, but like I said earlier, total foodie. You can use any bread/muffin you prefer!
The bananas were actually a last minute addition to this recipe. I was going back and forth on using a drizzle of honey or syrup when I saw the banana tree – tree like the kitchenware, not an actual plant – and decided that a little extra texture and dose of sweetness was exactly what this french toast needed. It’s not necessary to caramelize them first, but since I chose to use them in place of a liquid sweetener, I wanted to be able to “top” the toast.
We moved to Dallas about 6 weeks ago, and I’ve totally been feeling the fall vibes mentally but not at all physically – dang, it’s hot here! I think it’s a great thing and I’m so stoked to keep my Uggs stored at the very top of my closet where only my hubby + a step stool can reach them for as long as possible, but there is something that feels just a little strange about combining pumpkin and air conditioning. I’m still maintaining that this a great “problem” to have. So, that’s the scoop on what’s going in my tummy and (not) on my feet today. Have yourself an amazing and pumpkin-filled Hump Day, friends!
