Anyone else grow up eating Meatloaf?! We were definitely a comfort-food type of family, and meatloaf was one of my absolute favorites. My family wasn’t exactly one for cooking with the most nutritious or healthy ingredients though, and our meatloaf was no exception. Breadcrumbs, butter, whole milk, brown sugar – you name it, it was probably in our meatloaf.

My husband on the other hand, hates comfort food. {WHAT?!?!} Who hates comfort food?? He is a pizza, burger, chicken tender, pub food kinda guy. He doesn’t really go for the mac and cheese, mashed potatoes, meatloaf kind of menu. He has been traveling a lot for work, so I was able to try some new menu items while he was gone that he typically wouldn’t be so excited about. When I tried this, it was so delish, I figured I would give it a shot with him for dinner one night, and to my surprise, he liked it! He complimented it, twice!

Any time I can get comfort food, mostly clean ingredients, and my husband all on the same page, I am one happy girl!


What you’ll need:

  • a muffin tin for baking
  • coconut oil/olive oil spray
  • 1 pound lean ground turkey
  • 1/2 cup oats
  • 2 egg whites
  • 1/4 cup + 1 tablespoon ketchup
  • 1 tsp worcestershire sauce
  • 1 sweet potato
  • 2 tablespoons unsweetened almond milk

Preheat oven to 350 degrees. In a bowl, combine turkey, oats, egg whites, and 1/4 cup of ketchup and mix well. Spray the muffin tin with non-stick spray. Form mixture into 6 large balls and place them into the muffin tins.

Mix the worcestershire sauce and remaining ketchup and spread onto each mini meatloaf.

Cook in the oven for 30 minutes. During that time, microwave sweet potato until soft, but don’t over cook (mine took about 4 minutes with slices in it). Squeeze the potato out of the skin and put into blender/food processor with almond milk. Puree until it becomes smooth with no chunks of potato.

Spoon sweet potato mixture on top of meatloaf muffins evenly, and return to oven to bake for an additional 10 minutes.
