January 1 – Scripture & Pancakes

Happy New Year! Oh my goodness, I can’t believe this day is finally here – and I’m so thankful for all of the love and support you guys have shown about FaithFull Mornings! Preparing for, planning for, and executing this vision has been a lot of hard work. It’s been so humbling, and I’ve already learned so much. When God put this idea on my heart, I started writing with the idea of helping others learn more about and grow closer to Jesus. I had no idea how much I’d learn and grow in the process.

Today’s scripture is about scripture! I thought it was important to look at what the Bible says about scripture and its importance in our lives, before we dive into 364 more days of it. And of course, today’s recipe is pancakes – because there’s no better way to start the year than with pancakes + sprinkles.

God has breathed life into all Scripture. It is useful for teaching us what is true. It is useful for correcting our mistakes. It is useful for making our lives whole again. It is useful for training us to do what is right. By using Scripture, the servant of God can be completely prepared to do every good thing.

Honestly, when I first started exploring the concept of Christianity, and even early into my days as a Believer, I thought that the Bible was an “extra resource”. I didn’t always believe that it was the Word of God. I didn’t always believe that it was absolute truth. I picked out certain things I liked and agreed with, and avoided other things that I didn’t like so much.

I’m not here to preach at you; that would be a rough way to start Day 1! I’m not an authority figure, or your Sunday School teacher. Honestly, I don’t even know what I’m doing here other than having a fun daily conversation with friends about Jesus. But, I do need to tell you that I believe scripture is set apart by God. I believe that every letter that’s written in the Word is meaningful, intentional, and important. God must have known that so many people would have doubts and questions about the purpose of scripture, which is probably why He intentionally included this verse.

What I’ve personally found for myself is that when thoughts come up about “not believing in” certain verses, it’s usually an indicator for me to take a closer look at my behaviors and actions. Another word for that could be conviction. No one enjoys feeling called out, or being told we’re wrong – and I bet that one of the Devil’s greatest joys is manipulating God’s Word to create doubt or fear in the people who are actually seeking Him. After all, it worked out pretty well the very first time he tried it back in the Garden of Eden.

If you have doubts or questions about specific verses or topics in the Word, I encourage you to first examine your heart. The good news is that no one here is asking you to change your behaviors or beliefs. That’s not why I’m here – I know and trust that God is a God of grace, patience, and change. If there’s something in your heart or your life that doesn’t line up with God’s Word, He’ll show you when the time is right. However, I do believe it’s important to prepare your heart to be open to receiving those things from God, and that starts with looking honestly at the scriptures and reflecting on any feelings you have about them; both good and bad.

When I look closely at today’s verse, I see a list of amazing gifts that God’s giving us through scripture. The key is spending time in His word. I’m excited to spend the year doing that with all of you, and I can’t wait to see what He reveals, how He uses us, how He changes us, and how He prepares us for every good thing.

Serves 3-4 silver dollar pancakes

Ingredients

  • 1/4 cup spelt flour
  • 1 egg
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon unsweetened apple sauce
  • 1 tsp baking powder
  • 1 tsp cake batter extract
  • 1 tsp vanilla extract
  • 1 tsp pure maple syrup
  • 1/2 T sprinkles
  • dash of salt
  • non-stick spray

Instructions

  1. In a bowl, combine flour, baking powder, salt, and sprinkles and set aside
  2. In a separate bowl, combine remaining ingredients
  3. Add the wet ingredients to the dry ingredients and mix just until combined, do not overmix! Some small clumps in the batter are normal
  4. Allow to sit for 3-5 minutes
  5. Spray griddle or skillet with non stick spray, turn to medium heat, and allow to get heat pan
  6. Spoon batter onto griddle or skillet, leaving space between each pancake
  7. Cook on each side for 2-3 minutes or until sides are bubbling and batter is firm
  8. Serve with additional maple syrup, or other toppings, if desired

Tips & Tools

Extracts are my new favorite way to add some extra flavor to my foods! I originally found this extract at Walmart, but it’s not always available, so now I’ve started ordering it from Amazon. Your batter may require more liquid depending on the type of flour that you use. If your batter is dry once you’ve combined it, add in 1 tablespoon of water or unsweetened almond milk at a time until it’s a consistency that’s mostly smooth and easy to stir.
