Okay…that title was misleading. This is a healthy buffalo chicken pizza, and 90% of it was made in the crock pot. There… that’s better. Contrary to popular belief, eating healthy does not mean that you don’t miss your old go-to’s. But instead of wasting my hard work for the week – I made a healthy version! And you 21 Day Fixer’s can include this in your meal plan – because it’s approved!
Fill your crockpot with chicken breast or tenderloins in 1 cup of Frank’s buffalo sauce, and 1/2 cup of low sodium chicken broth. Cook it on low for 6 hours or high for 4 hours. Once it’s done, put your dough in the oven. I used the same dough as when I made the BBQ chicken pizza. Trader Joe’s whole wheat raw dough (in the refrigerated section) or Boboli whole wheat dough that is pre-cooked. Don’t put the precooked dough in the oven right now if that’s the kind you are using. Skip to step two 😉 The raw dough should be cooked for around 15 minutes until it rises and it slightly browned.
(This is step two ->) While dough is cooking, shred chicken. It should shred really easily from cooking in the crockpot. Chop 2 stalks of celery, and add an additional 1/4 cup of buffalo sauce. Mix it all up. Brush a really thin layer of the buffalo sauce on your dough, and then add chicken mixture. Top with 1/4 cup of blue cheese crumbles and 1/4 cup of low moisture mozzarella cheese. Put it back in the oven for another 10 minutes, or until cheese is melted.

21 Day Fixers: You can have 1/4 of this pizza (if you are using the Trader Joes dough). I’m not sure about the Boboli. This counts as: 1 yellow, 1 red, 1/2 green, and 1 blue!
