Healthy Apple Dumplings


Crazy things happen when we skip Froyo Friday. CRAZY THINGS. We went to a comedy show last night instead of our typical date night under the plastic canopies of Orange Leaf. The Columbus Funny Bone has become one of our favorite places to frequent, there’s always great acts and the space is intimate enough that most comics come out to say hi at the end. Anyway, because we decided to paint the town red and didn’t get out until 10 PM (gasp! so so late, right?! when did I become 100 years old??) froyo had already closed down for the evening. I could have waited until today and let the extra day of anticipation build up.. but instead, I did something better. I pulled out the air fryer.

Apple pie is one of my favsssss, something about the warm crispy outside and the gooey inside, paired with ice cream…yum. It was almost as good as froyo. But definitely different, and I love creating anything new, especially with this trusty small appliance crush I have going on.

A word of caution; these wonton wrappers aren’t the easiest things to work with. They tend to crumble or tear if you don’t use the right filling to folding space ratio, but they are pretty hearty, so if you can just get them to stay sealed and drop in the fryer, they typically won’t fall apart on you. The presentation value might not be there, but they’ll still taste just as good! If you’re looking for bigger dumplings, there’s also an egg roll wrapper option, a lot bigger and more room for movement.

And I need to take a quick second to talk about this Halo Top Ice Cream – guys, I can’t even. It’s SO good, and SO good for you. Not good for you like kale, good for you like ice cream that’s not bad for you. I’ve hunted down so many of the different flavors and haven’t found a bad one yet. Lemon Cake is probably my favorite, but they are all good. Get some, even if you don’t make these dumplings. Just eat it straight from the pint. Do it.

You could probably fill these wontons with other things as well – the dumpling options are endless!

Healthy Apple Dumplings

Healthy Apple Dumplings

Ingredients

  • 1 large apple
  • 2 tsp raw honey
  • 1 T chopped pecans
  • Dash of cinnamon and nutmeg
  • 15-20 wonton wrappers
  • 2 scoops vanilla ice cream (I prefer Halo Top)
  • Non-stick spray

Directions

  1. You'll want to make this dessert in two separate steps, first bake the apples, and then prepare the dumplings.
  2. Baked Apples
  3. Pre-heat oven to 350 degrees
  4. Chop apples into small pieces and arrange on a non-stick glass baking dish
  5. Drizzle honey over apples, then sprinkle cinnamon and nutmeg
  6. Sprinkle chopped pecans in with apples
  7. Bake for 20-25 minutes until apples are soft and browning, but not burnt
  8. Apple Dumplings
  9. Once the apples are baked, pre-heat air fryer to 400 degrees and spray with non-stick cooking spray
  10. Lay wonton wrappers flat and fill with pieces of apple bake, leaving enough rooms that wontons will still fold without breaking
  11. Using a small amount of water, seal the wontons
  12. Place in air-fryer for 10-12 minutes until the outside is crisp and brown
  13. Be sure to stir frequently
  14. Serve with a scoop of vanilla ice cream
  15. Enjoy!
