Hubby surprised me this year by cooking Valentine’s Day dinner all by himself – he’s SO sweet. I knew he was already stepping way outside of his comfort zone with the main course, so I offered to take on dessert.
I was determined to find the perfect combination of healthy yet amazing, and I wanted something fun. It didn’t take me very long to think of ice cream sandwiches – I know it doesn’t sound that romantic, but we love them. There’s a place in Breckenridge called Mountain Top Cookie Shop that has the best cookie sandwiches – like ever. They’re filled with all sorts of things, and SO delicious. You can smell the amazingness within blocks of the tiny, adorable cookie shop on Main St. Seriously, if you ever find yourself in Breck, GO. Or even if you don’t find yourself there, it’s worth the trip.
Anyway, you can see what’s on my mind 90% of the time – cookies. I wanted to recreate some version of these cookie sandwiches, but to make it a little easier, I chose to do ice cream instead of whatever goodness is in the professional cookies, because let’s face it, it would never measure up.
Halo Top ice cream is my JAM. It’s high protein, low calorie, and low sugar ice cream that doesn’t taste like any of the words I just said. It’s made with stevia and it’s SO yum. I use it for everything that requires desserts – birthdays, parties, and of course, ice cream cookie sandwiches. These sandwiches will last for quite awhile in the freezer, so you can make a few and save them for the days you want (need) a treat but don’t want to eat 6,000 calories worth of froyo or chocolate cake – doesn’t everyone do that sometimes?
Lastly, I’m all about customizable anything. You can add any extras to these cookies that you like – white choco chips, nuts, raisins – AND you can totally switch up the ice cream filling flavors. I made one with s’mores ice cream and the other with birthday cake. If you’re feeling really adventurous, you can roll the sandwich in sprinkles or additional chocolate chips before freezing.
I have a shirt that says “I did it all for the cookie” and I often wonder what “it all” is, but for these guys, there’s pretty much nothing I wouldn’t do. Enjoy!
