Hubby surprised me this year by cooking Valentine’s Day dinner all by himself – he’s SO sweet. I knew he was already stepping way outside of his comfort zone with the main course, so I offered to take on dessert.

I was determined to find the perfect combination of healthy yet amazing, and I wanted something fun. It didn’t take me very long to think of ice cream sandwiches – I know it doesn’t sound that romantic, but we love them. There’s a place in Breckenridge called Mountain Top Cookie Shop that has the best cookie sandwiches – like ever. They’re filled with all sorts of things, and SO delicious. You can smell the amazingness within blocks of the tiny, adorable cookie shop on Main St. Seriously, if you ever find yourself in Breck, GO. Or even if you don’t find yourself there, it’s worth the trip.

Anyway, you can see what’s on my mind 90% of the time – cookies. I wanted to recreate some version of these cookie sandwiches, but to make it a little easier, I chose to do ice cream instead of whatever goodness is in the professional cookies, because let’s face it, it would never measure up.

Halo Top ice cream is my JAM. It’s high protein, low calorie, and low sugar ice cream that doesn’t taste like any of the words I just said. It’s made with stevia and it’s SO yum. I use it for everything that requires desserts – birthdays, parties, and of course, ice cream cookie sandwiches. These sandwiches will last for quite awhile in the freezer, so you can make a few and save them for the days you want (need) a treat but don’t want to eat 6,000 calories worth of froyo or chocolate cake – doesn’t everyone do that sometimes?

Lastly, I’m all about customizable anything. You can add any extras to these cookies that you like – white choco chips, nuts, raisins – AND you can totally switch up the ice cream filling flavors. I made one with s’mores ice cream and the other with birthday cake. If you’re feeling really adventurous, you can roll the sandwich in sprinkles or additional chocolate chips before freezing.

I have a shirt that says “I did it all for the cookie” and I often wonder what “it all” is, but for these guys, there’s pretty much nothing I wouldn’t do. Enjoy!


Healthier Ice Cream Cookie Sandwich

  • 1/2 cup oats
  • 6 T whole wheat pastry flour
  • 3/4 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1 T melted coconut oil
  • 1 egg white
  • 1/2 tsp vanilla extract
  • 2 T almond butter
  • 3 T raw honey
  • 2 T dark chocolate chips
  • 3/4 cup ice cream of choice


  1. Preheat oven to 325 degrees
  2. Combine egg white, vanilla, and almond butter and mix until smooth
  3. Add honey to mixture and mix well.
  4. Add in all remaining ingredients except for chocolate chips and ice cream
  5. Mix until smooth
  6. Add chocolate chips and mix just until combined
  7. If batter is dry, add water 1 T at a time until it's smooth
  8. Place in freezer for 5 minutes to firm up
  9. Line a cookie sheet with parchment paper
  10. Remove batter from freezer and roll into 6 evenly sized balls
  11. Place on cookie sheet and press down with a spatula to create a cookie
  12. Bake for 10 minutes or until cooked through and slightly golden
  13. Remove from oven and allow to cool completely
  14. Sandwiches
  15. Remove ice cream from freezer and allow to soften slightly
  16. Place a piece of plastic wrap and 1 cookie upside down on a flat surface
  17. Scoop 1/4 cup ice cream onto the bottom of a cookie, and place another cookie on top
  18. Squeeze slightly to create a sandwich
  19. Wrap cookie completely in plastic wrap and place in freezer for several hours to harden
  20. Follow the above steps with remaining cookies
  21. Remove from freezer 10 minutes prior to eating to soften slightly
