I am totally guilty of not meal planning or prepping this week. I had a great plan to sit down and create my meal plan live for the ladies in my accountability group, so I could share some of my favorite tips – and then I realized that Google + changed it’s platform, and the hangouts on air tool is no longer an option. Instead, the platform has transferred to Youtube, where you can live stream AFTER downloading and figuring out how to work some software – believe it or not, technology isn’t a strength of mine. I become frustrated easily and it’s all downhill from there. My point is that I couldn’t figure it out, never did my live video, and didn’t meal plan at all – WHAAAA.
Luckily, I have some super easy recipes in my back pocket for days that I have no plan, limited ingredients, and I wait until 5 PM to even start thinking about dinner. This meal was one of those! Praise Jesus that it turned out really well.
I originally wanted to title this post “Unrolled Eggroll” but that sounded a little confusing – but since I still love it, I’m mentioning it here, because it deserves a shoutout. Whatever you want to call it, this meal is essentially an eggroll, in a bowl. No roll. So it’s an egg in a bowl… except there’s no egg. Who came up with the term “eggroll” anyway? Shouldn’t it have been called a meat roll? If that’s not every chef’s dream, I don’t know what is.

Moving on. Traditionally, eggrolls have cabbage in them, but we didn’t have any, so I used this broccoli slaw, which ended up being great! Either one works. If you haven’t tried liquid aminos yet, you’re in for a real treat! It tastes identical to soy sauce, but without all the yuck! You can buy it at most grocery stores, but ordering it on Amazon has been the most affordable way I’ve found. If you can’t find it or don’t want to wait, you can use low sodium soy sauce.
I’m all about customizable meals, so feel free to try out some different substitutions to satisfy your tastebuds! I used lean ground turkey, but lean ground beef or bison would also work. For the vegetarians out there, Tempeh would work awesome as well!
I know there’s nothing like a deep fried egg roll, but to practice balance, sometimes it’s necessary to enjoy it in a bowl!
