Control Freak & Hawaiian Pancakes

Give the Lord a chance to show you how good he is. Great blessings belong to those who depend on him!


I love this verse, because it serves as a beacon of hope, a source of encouragement, and the reminder that most of us need daily to trust the Lord.

There’s something incredible about the phrase “give the Lord a chance…” God doesn’t require our validation or approval, yet He eagerly proves Himself to us constantly. He proves that He’s trustworthy, that He’s kind and caring, and that He will provide what we need, even when it feels like we’re lost at sea without a paddle.

And this scripture is a lesson for all of the control freaks out there (me especially). So many of us walk around with a false sense of control, like we have it all together. We struggle to give up command, we choose action instead of rest, worry instead of trust, and fear instead of faith. When we make those choices, we’re missing out on the goodness that God wants to show us through our dependence on Him.

The Word is telling us to just try it out – release our tight grip just a little. God will notice, and He’s waiting to show us His goodness. He wants to pour in blessings and open our eyes to those blessings so that our faith will be strengthened and our hope will begin to build.

Serves 1 • 4-5 Pancakes

  • 1/4 cup spelt flour
  • 1 egg
  • 1/3 cup crushed pineapple
  • 1/2 tablespoon unsweetened apple sauce
  • 1/2 teaspoon baking powder
  • 1/2 teasoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 teaspoon pure maple syrup
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon shredded coconut
  • dash of salt
  • non-stick spray


  1. In a bowl, combine flour, 1/2 of the shredded coconut, and baking powder and mix then set aside
  2. In a separate bowl, mix egg, crushed pineapple, applesauce, vanilla, coconut extract, syrup, and almond milk
  3. Add dry ingredients to wet ingredients and mxi just until combined
  4. Spoon batter on to hot griddle or skillet and cook for 2 minutes on each side
  5. Top with remaining coconut
