Commitment & Pecan Pie French Toast

Jesus replied to him, ‘You should love the Lord your God completely: Love him with all your mind. Love him with all that you are. Love him in all that you think. 


Are you as consistent in your prayer life as you are in your daily exercise? What about in your commitment to eating healthy? Do you check in with God as often as you check in with Facebook? I know I don’t. My husband and I were chatting this morning about why prayer and time spent with God often gets put on the back burner, when it should be the exact opposite. A lifetime worth of exercise, living healthy, and building business knowledge can’t do even a fraction of what time spent with our creator can do. Yet, He’s put second (or third, or fourth…)

The good news? He loves anyways. When we finally show up after hours, days, weeks, even a lifetime, he’s there, full of love. Unfathomable, right?! I’ll hold a grudge against you for the rest of the month if I saw that you read my text and didn’t respond. Not Him.

Wherever you’re at in your life, no matter how long it’s been, or what you think you’ve done that’s simply unforgivable, I urge you to show up to Him today. The false satisfactions that we get from controlling, working to do it all alone, and going a million miles per hour to get it all done are just that; illusions.

In the fitness world, we don’t get guarantees. In the business world, we don’t get guarantees. In faith, I am guaranteeing you that if you give it to Him and you show up, He WILL meet you. I don’t know how that looks, when it happens, I certainty can’t understand why it happens, but I know without an ounce of doubt that it does. Faith will lead you where nothing else ever can.

Pecan Pie French Toast

Serves 6 Pieces French Toast

  • 1/2 loaf thick bread
  • 1/4 cup unsweetened almond milk
  • 1/4 cup canned coconut milk (coffee creamer will work here as well)
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 3 tablespoons butter
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup chopped pecans


  1. Cut bread into thick slices
  2. In a bowl, combine eggs, almond milk, coconut milk, and vanilla extract
  3. Pour egg mixture over bread slices and cover with foil
  4. Place in the refrigerator for 30 minutes to soak
  5. Preheat oven to 350 degrees
  6. Melt butter in a small saucepan and remove from heat
  7. Add all remaining ingredients to butter and stir until completely combined
  8. Spread butter mixture across the bottom of a baking dish
  9. Place bread slices on top of mixture, gently pressing each slice down into the mixture
  10. Bake for 30 minutes
  11. Allow to cool for 5 minutes then serve
