I had 1 Ezekiel English Muffin left, and was feeling kinda crafty today. I initially thought I wanted french toast, but something didn’t feel quite right about committing to my usual french toast recipe (we take brunch very seriously around here) so I thought I would just… open my mind and see where this muffin took me. We landed at french toast bites!
You can use bread or an english muffin for this, but since I was already working with the muffin (plus, I hate crust) it worked out perfectly. Prepare your batter by adding 1 egg white (or 3 tablespoons of liquid egg whites), 1 tablespoon of unsweetened almond milk, 1 teaspoon of pure vanilla extract, and a dash of cinammon. Mix well.
Tear your muffin or bread into small pieces (you can cut them if you want it took a little prettier than this), dip each piece in the egg mixture with a fork, or your hands if you don’t mind the eggy-ness.
Serve with greek yogurt and fruit for dipping, or if you want to use organic pure maple syrup, or Hey Shuga syrup, those are both options as well! I opted for greek yogurt and fruit, for the extra protein and less sugar.
