Clean Cookies… Avocado included!

I am doing the 3 Day Refresh, so of course, I woke up dreaming of cookies. Made these the other night, and they are AMAZING! Not only the taste, but the texture is so great {cake like} and they are TOTALLY CLEAN! Let me warn you, they look a little strange and the ingredient list might scare you – but GIVE THEM A CHANCE! Seriously, my husband tells me all the time that I “make weird things” so when I made these, I didn’t even tell him they weren’t his chemical -filled, boxed favorite, and guess what, he never knew!  I wish I could take credit for coming up with these, but I found them on Pinterest – for whatever reason, I just screen shot the recipe and never pinned it – so some amazing person created these, and if you are her, THESE ARE AWESOME and I’m sorry I cannot credit you for this!

In a food processor, combine 1 really soft avocado (peeled and cored), 1/2 cup of coconut sugar (can be found at Trader Joes or organic section of most grocery stores), 2 egg whites (the original recipe called for 1 egg, I changed it to the 2 egg whites, and worked out perfectly – your choice!), 1/2 cup of unsweetened dark cocoa powder, and 1/2 teaspoon of baking soda. Process until smooth. Throw in 1/2 cup of unsweetened dark chocolate chips and stir around. Scoop cookies onto parchment paper (flatten them down a bit, they don’t spread like normal cookies – and they will stay in the shape you leave them, so if you want to serve them to be pretty… well, good luck.) Cook on 350 for 10 minutes and enjoy!
