I love having a tasty little treat ready to go at any minute. I used to run to the pantry and grab chocolate covered raisins or almonds, but I still felt like I needed something cleaner than that. I like to have things that I prepared, so that I know what went into it.
I started making little energy bites and storing them in the fridge. The things you can create in these little bites = amazing! So many fun, creative recipes to roll into a ball and devour.
If you didn’t see me share, I recently ordered Nikki’s Coconut Butter, and it’s delicious. I knew that I wanted to use this in my bites, so I put the focus on coconut. If you don’t have coconut butter, you can sub for peanut butter.
Here’s what you’ll need:
- 1 cup of oats (any type will work!)
- 6 Medjool dates (pitted)
- 1 tablespoon of Nikki’s Coconut Butter (you can use peanut butter or pb2 here as well. 1 tablespoon of peanut butter or 2 tablespoons of pb2)
- 1 tsp pure vanilla extract
- 1 tsp Hey Shuga syrup (or raw honey)
- a pinch of salt
Put all ingredients in a food processor and blend until everything is broken down. This will still create kind of chunky texture. Add a tsp of water and mix around with wet hands. Roll into bite sized balls, this created 10 for me. Be sure to keep hands wet in order to keep batter from sticking to your hands. Place in the fridge for at least 1 hour before eating.
If you’re feeling extra coconutty, you can roll these in unsweetened coconut flakes before putting them in the fridge! Enjoy, guilt free!
