Chosen & Mint Chocolate Chip Pancakes

You did not choose me, but I chose you. I chose you to go and to make plenty of fruit. That kind of fruit will continue always. For that reason, the Father will help you with anything that you ask him. If you ask him in my name, he will do it for you.


I chose you. Isn’t that one of the most powerful things we can hear as humans? Isn’t that the phrase we spend our lives chasing and the desire behind most of our behaviors? Chosen. God chose you. He chose me. We’re accepted, wanted, treasured, and loved. And more than just chosen, we’re chosen for purpose, which is another thing many of us search everywhere for. Isn’t it encouraging to know that God helps us with both of those internal struggles?

God looks at us and knows that with His power, we can produce fruit that lasts. Galatians 5:22-23 tells us about the fruit that Jesus is referring to; love, joy, peace, patience, kindness, goodness, faithfulness, gentleness, and self-control.

When life leads us to call our value and purpose is called into question, this is a verse we can reflect back on. We were chosen to do amazing things. Displaying the fruits of the Spirit is one of the most important things we can do as Christians. It’s what Jesus did when He walked on the earth. It’s what glorifies God. It’s what brings others to the Lord.

This isn’t just something to reassure us, it’s also something to guide us in our prayers and our search for God’s will. When we’re praying and seeking, we know that our “starting point” is the knowledge that we were chosen to produce the fruits mentioned above. That needs to be the foundation of trying to understand God’s plans for our lives. Understanding our purpose means understanding God’s purpose for us. Once we understand that, we are better equipped to make choices and decisions as we walk through life.

  • 1/4 cup spelt flour
  • 1 egg
  • 3 tablespoons unsweetened almond milk
  • 1 tablespoon unsweetened apple sauce
  • 1 teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 1/2 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1 teaspoon pure maple syrup
  • 2 tablespoons cup chocolate chips
  • green gel food coloring
  • whipped cream (optional)
  • dash of salt
  • non-stick spray


  1. Pre-heat a griddle or a skillet and spray with non-stick cooking spray
  2. In a bowl, combine egg, almond milk, apple sauce, extracts, and syrup and mix
  3. In a separate bowl, combine flour, cocoa powder, baking powder, and salt and mix
  4. Combine the wet ingredients with the dry ingredients, as well as the chocolate chips and around 5-8 drops of food coloring
  5. Mix until just combined and batter is smooth
  6. Allow batter to sit for 1 minute before cooking
  7. Spoon batter onto hot skillet and cook for 2 minutes on each side
  8. Top with whipped cream if desired

Tips & Tools

Truth; these pancakes did NOT turn out as green as I wanted them too. I probably could have used more food coloring, but I made them once before these photos, and apparently used too much food coloring – so I was nervous about finding the right balance. These have about 5 drops in the batter, so you can use that as your guide.

I’m SUPER obsessed with the almond milk whipped cream right now from Reddi-Whip – you can find it at most major grocery stores!
