We loveeeeeeee Mexican food and eat it at least 2 times a week. While tacos are a fun weeknight meal, the same thing over and over again gets old, no matter how much you love it. So, I felt called to take the same ingredients and put a new spin on it.
These DID not disappoint. I was worried that the tortillas would be a little mushy underneath all of the ingredients, but that didn’t happen at all. In fact, the tortillas got crispy and delicious, even under the pile of yum.
Ezekiel has an amazing tortilla that I’m way too obsessed with. Trader Joes also has their own brand that we eat from time to time. Can I just use this platform for a quick rant about carbs, while we’re on the subject? SO many people are horrified to hear recipes with carbs in them – and can I just ask whyyyyyyya?! If you follow a gluten-free diet, I get it, probably not the best option for you. But if you can consume bread products, there’s no reason to be afraid of them! Just like every other food group – there’s healthy and unhealthy brands, products, and serving sizes. I’m way way way over the “no carb” fads – mainly because that sounds like a really unhappy existence. I eat a certain amount of carbs each day, based on a balanced meal plan, and I pretty much live for those servings. When they’re gone for the day, I consider it bedtime and dream about breakfast. My point is, if you’re not eating carbs, and you’re happy that way, you rock sister – more power to you! But, if you’re trying to cut out carbs in hopes of losing weight or being healthier and you’re miserable – there’s an easier way! I try to focus on eating 3 servings of carbs per day and avoid eating processed carbs, such as white bread. If you’re still not buying it, you can read another rant from my main man Tony Horton.
