Caramel Cinnamon Waffles… Sushi Style!

Do you guys ever get sick of my breakfast posts? Gosh, I hope not – because they are not going anywhere anytime soon. I have a couple of key players in my breakfast game, and one of those is my waffle maker. I use my favorite pancake recipe, and BOOM – done!

Today I was feeling extra crafty, so I modified my recipe ever so slightly, and then had some fun with it.

First – combine 1/4 cup of whole wheat flour, 3 tablespoons of liquid egg whites, 1/2 cup of plain greek yogurt, a dash of cinnamon, 1/2 tsp of baking powder, and 1/2 tsp of caramel extract (you can really use extract of choice here!). Mix until smooth. Pour into waffle maker and cook as normal.

Spread toppings and fruit of choice across and roll up.

Once rolled, cut in half and secure with a toothpick.

This recipe makes 2 waffles. In one, I spread a little plain greek yogurt and raspberries, and in the other, I spread some Justin’s almond butter and cut strawberries. You can drizzle with fresh honey or Hey Shuga syrup if you like! Perfect, delicious, adorable breakfast – and just in time for Mother’s Day Brunch!
