My culinary adventures this week have been crazy. Hubby has been out of town, so I’ve had lots of free time to experiment and make an absolute mess of the kitchen. The unfortunate part is that I’ve hired him as my professional “dish-doer” and I finally had to roll up my sleeves last night and wash every pot and pan that we own. BOOOO. I bet Rachel Ray has people for that, I need better help around here.
These pancakes though. You know when you’re eating something clean, but it tastes so good that you keep thinking to yourself “this has to be a mistake”. This statement describes these pancakes.
If you haven’t heard of Eat Me Guilt Free, stop what you’re doing (well… finish reading this first) and go check them out. Their product line is crazy and their ingredient list is even crazier. This brownie batter has nothing but good stuff in it – Whey protein, unsweetened cocoa powder, baking soda, stevia. BOOM. That’s the good stuff – brownies that have no artificial sweeteners and no chemical junk.
I found Eat Me Guilt Free on Instagram and tried really hard to convince myself that I did not need to order brownie powder. That mentally went on for a whole 5 seconds before my order was placed, and this beautiful bag was at my doorstep in 3 days.
Don’t get me wrong, I love brownies, but my heart is always with pancakes, so I wanted to use this mix to make some protein packed, yummy dessert pancakes. Here’s the cool thing, this brownie mix says that it’s 90 calories unprepared, 160 calories prepared. Well with just a little tweaking, I created a pancake recipe that is 202 calories for the entire stack (mine made 4!) and a whooooooping 28 grams of protein per serving – and that doesn’t include any deliciousness you add to the top. Okay, since your mouth is watering and you hate me for rambling so long, let’s get to these bad boys.
Did I mention that there are only 4 ingredients needed for this entire recipe??
What you’ll need:
1/4 cup Eat Me Guilt Free Brownie Mix
1/2 cup 0% plain Fage Greek yogurt
1/2 tsp baking soda
1 cage free, organic egg
In a bowl, combine all of the above and mix just until ingredients are blended. Do not overmix, the more you mix, the less fluffy they are! Spray pan with coconut oil or melt ghee or grassfed butter (calories for this not included in above). Spoon batter into pan and cook for about 2 minutes on each side over medium heat. Check these frequently, since they are chocolate, it’s hard to tell if they are burning.
Top with choice toppings. I made a little Buckeye Blend with melted peanut butter and fresh blackberries.
