My husband loves blueberry everything, so on the weekends, we always have some sort of blueberry pastry. In order to keep him away from the outside pastries, I make something yummy here!
Blueberry Waffles are always a hit, and they are SO easy to make. The fam won’t even know that these aren’t loaded with sugar and butter. These serve 2 people.
In a bowl, combine 1 cup of 0% plain greek yogurt, 1/2 cup of whole wheat flour, 1 teaspoon of baking soda, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and 2 eggs. Whisk until blended. Add in 1/2 cup of fresh blueberries and stir gently, enough to mix without breaking the berries. Spray waffle iron with coconut oil and cook according the directions on the iron.
While waffles are cooking, heat 2 tablespoons of raw honey in a sauce pan until thin. Drizzle over waffles!
